Enchilada Casserole

so my body/stomach are healing just fine 
that means one thing,
if you know me AT ALL
you know i adore, love, crave, live, breath, anything mexican food.
american mex, tex, mex, authentic mex, 
salsa, quacamole, beans, pico de gallo, tamales, fajitas, nachos, tacos, burritos, 
all of it. 

so, it was only natural that our first meal in our new apartment was to be some sort of mexican dish. 
i threw together this Enchilada Casserole in just a few quick min. 
its sooooo easy to make, and so yummy to eat. 

velveeta cheese, corn tortillas, refried beans, olives, rice (not pictured), cayenne pepper, cooked and seasoned beef (or meat of choice) ,enchilada sauce, fiesta blend cheese and home made salsa (not pictured)

i browned and seasoned the meat, you can do this earlier in the day, its even a GREAT way to use leftovers. 
i use a dry taco seasoning for this meat, its what Fiance likes and im not the one eating it so whatever :)

yes, our counters in this apartment and poorly cut, it saddens me. 
i use minute rice, the kind that comes in the bag so you just throw it in a pan of boiling water. 
its genius. seriously. its supposed to be cooked for 10 min but only cook it for about 7 or so because it will be cooked in the oven as well. 

next i season my rice. i add a little cayenne pepper and some of the red enchilada sauce i already have out. you can choose to eat this as a side or throw it in the dish. 

prepare your beans

pour a little of the enchilada sauce in the bottom of your pan, as you can see i used the same spoon as the rice, so there is a little rice in the bottom of my pan. oh well. 

my pan was an 8x11 i believe, big enough for two corn tortillas side by side, 
dip the tortillas in the sauce and then flip them over so sauce is on both sides

i threw some velveeta cheese in the skillet with the beef and let that simmer until melted 

now, because i dont eat beef and Fiance doesnt eat beans this was a little tricky
layer half the dish with meat and the other half with beans, 
(yes, this happens alot where we have to specially make food haha) 

i forgot to take a photo but on top of the meat and beans layer tortilla, i tore min up in bite size pieces you can just lay two tortillas, i find it easier to dish out with them torn apart. 
on top of the tortillas spread the rice and pour a little more enchilada sauce. 

again, he likes salsa in his food and hates olives, i prefer salsa as a side but i LOVE olives. 
layer your vegetables of choice over the rice. its crazy to think Fiance and i put forth the extra trouble at dinner time. ha. 

again, corn tortilla over the veggies

 spoon the remainder of the meat and beans over the tortillas

top with cheesy goodness

bake in the oven at 350 for 30 min or until you think its ready.
serve with corn chips, queso, a dalop of sour cream and avocado slices.

this made enough for 6 servings. 
and it was DELICIOUS.
you can also freeze it instead of baking. 
just thaw for 30 min and bake for 50 min. 
we totally had it for lunch the next day.
