Roasted Red Potatoes and Green Beans with Rosemary and Thyme


Boil 'em, smash 'em, stick 'em in a stew. (five points to all our fellow nerds who get that) We love potatoes in this house. I prefer them smothered in spices, oils, and with a little crisp, usually by themselves. Brad prefers to eat them with meat. Yum, but this recipe has become our favorite rather quickly! I found a recipe in one of my Barefoot Contessa cookbooks for roasted veggies. It was for fennel, fingerlings, and asparagus. As it turns out, I'm not a fan of asparagus.... but I am a fan of roasted veggies and rosemary so this recipe was inspired. 

The best part of this recipe is that you can pop them in the pan and into the oven and leave them for 25 minutes. That's enough time to watch half an entire episode of Chopped on Netflix. Hit pause, flip the potatoes so they are nice and crispy on each side. Hit play and watch the rest of the episode. When Chopped is over you will realize the oven timer has been going off for two minutes... but hey you just learned how to turn popcorn and snow-cones into dessert. That was hard work, give yourself a break before the next episode and gobble up these potatoes and green beans. Sure, they may be slightly crispier, and your husband might make a joke about them being burnt, but you like them like that. 



One of our family goals this year is to cook together more. We are pretty good at cooking, but we want to prep and cook as a team more. Is there anything more attractive than a man in the kitchen? Not in my book, unless he's also pouring me wine while he's in there. Our goal is to cook dinner together once a week. We all know I am a *bit* of a perfectionist. Yes, that is a flaw. When we cook together we divide the meal. One person chops veggies, the other handles the meat. I usually do any chopping, slicing, etc. Brad handles the cooking of meat. I'm just not a real big fan of searing anything that might have blood on or it. Or even anything that might look like blood. ICK. Don't worry, I'm not about to get all PETA up in here. Meat is just gross when it's raw, and I'm not about that life. Now veggies, I can handle that. I've got mad knifing skills bruh. 



These potatoes and beans are a one man recipe, but pair them with a delicious grilled chicken or pork loin and you have a date night in the kitchen. Teamwork is vital in a marriage. And as per my previous statement, hot men in hot kitchens is hot. You're welcome.
